Commercial kitchens result in soot, cooking oil fumes and odour that will affect the indoor air quality. The cooking process with oil droplets in the air group plus kitchen or food residues in the plant, can be easy way to breed a large number of microorganisms such as bacteria and fungi. During the microbial decomposition of organic compounds, this can also release unpleasant gases, such as ammonia and hydrogen sulphide.
Chemical cleaners can be hazardous in these environments and are only temporary solutions, and cannot be applied to hard to reach places. Not to mention the high staff labour costs involved.
